A reception does not have one drinking moment. It has three, and they ask different things of the same counter.
The aperitivo is the busiest: guests arrive together, nearly all of them are standing, and nearly all of them order inside the same half hour. It is also when most of them meet each other, and a glass in hand is the fastest way to start a conversation. Through dinner the bar slows down and becomes a backup service. After the cake it starts again, and that is usually the longest stretch of the night: the one with the dancing, where the bar decides whether the party keeps going.
Three rhythms, one counter. That is why we ask how many hours the bar stays open and not only what time it starts: the ice, the menu and the two bartenders are sized against that. We arrive early, build it, work, and take it down at the end. Nobody has to think about the bar - not you, and not whoever is helping you with everything else.
Where the bar goes, and why to decide it early
A bar is not a table. It is the place a queue forms, and where you put it changes how the reception moves.
Next to the aperitivo area it works hardest but gathers everyone in one spot. A few metres away it spreads guests out and keeps the service route clear. Against a wall it serves from one side; out in the open it serves from two, and for the same number of guests the queue halves. These are easier judgements to make with the place in front of you than in the week of the date.
On our side the constraint is simple: we work with the power and water already on site. We do not ask for a dedicated supply or a structure to be built: the bar goes where it is needed, in a house, a garden, a courtyard, a vineyard or a farmhouse.
